Rhubarb and strawberries are both harvested around the same time AND they pair together amazingly, so this is a good choice for a rhubarb-strawberry recipe!
This very versatile sauce brings a whole new berry good flavour to pudding, pound cake, ice cream, crepes, pancakes, and waffles!
I made this tasty sauce today, and it turned out fabulous!
You may want to make a double batch!
Ingredients
Note - if you are using frozen rhubarb for this recipe, thaw it in a sieve, over a bowl, and use the drained liquid for the 1 cup water, and discard the excess liquid.
2 1/2 cups rhubarb, chopped (fresh or frozen)
1 cup water
1/2 cup sugar
2 tbsp. grated lemon peel, optional
1/4 tsp. salt
1 cup sliced fresh or frozen strawberries, thawed
2 tbsp. lemon juice
1/4 tsp. cinnamon
red food colouring, optional

Directions
In a pan, combine the rhubarb, water, sugar, lemon peel and salt, and bring to a boil.
Reduce heat, and cook, uncovered over medium-low heat until rhubarb is soft. (about 10-15 minutes)
Remove from the heat and let stand for 5 minutes.
Stir in the strawberries, lemon juice and the cinnamon.
Add the food colouring, if desired.
Cool, and serve over cake, ice cream, etc.
Makes 3 cups of delicious rhubarb strawberry sauce!
