Most rhubarb cookie recipes are the "drop style" cookies.
Drop cookies are baked on a cookie sheet by dropping the prepared dough onto the cookie sheet using two dessert size spoons. It is important to remember to allow ample room for the cookies to spread during baking.
Have you ever had the disappointment of baking cookies that spread too much, even blending together on the cookies sheet, resulting in extremely flat cookies?
You can prevent excess spreading of cookies by chilling the dough, mounding the dough when "dropping" it, and baking it at the correct temperature for the entire baking time (be sure to pre-heat the oven).
Remove baked cookies from the cookie sheet, and allow them to cool on a wire rack.
When storing drop cookies, be sure not to mix soft style cookies with crisp style cookies. Mixing these two types of cookie will result in the crisp variety becoming undesirably soft.
