You may want to preserve (can) the juice, or use it fresh as an ingredient to make a healthy drink or punch.
Since rhubarb is so easy to grow, and usually will yield repeatedly good
and bountiful rhubarb harvests, if you grow rhubarb, you may want to
pack all that healthy rhubarb goodness into home-made juice!
Refrigerated, this juice will keep for up to a week.
Chop washed rhubarb into 1/2" to 1" pieces, or use chopped frozen rhubarb.
Place chopped rhubarb in a large pan.
Add just enough water to cover the rhubarb, bring to a boil, and then simmer on "low" until rhubarb is soft, about 30 minutes, stirring occasionally.
Strain the mixture through a jelly bag, or a very fine sieve, pressing with the back of a spoon to extract the juice.
Discard the solids or use them to make another rhubarb recipe!
If you want to sweeten the juice, do so by adding about 1/4 cup of granulated sugar for each 2 lbs. of rhubarb.
Add the sugar immediately after straining the stewed rhubarb and stir to dissolve the sugar completely.
You can use this pure juice to as a base to make rhubarb punch and other rhubarb drinks.

Chop washed rhubarb into 1/2" to 1" pieces.
Place chopped rhubarb in a large pan.
Add just enough water to cover the rhubarb, bring to a boil, and then simmer on "low" until rhubarb is soft, about 30 minutes, stirring occasionally.
Strain the mixture through a jelly bag, or a very fine sieve, pressing with the back of a spoon to extract the juice.
Discard the solids.
Transfer the juice to a non-reactive pan, and to each quart of juice, add one cup of granulated sugar.
Heat the juice and sugar, until the sugar is dissolved.
Skim, and bring to a boiling point.
Pour into hot jars and seal, according to manufacturer's directions.
