This recipe for Sour Cream Rhubarb Bars makes delightful rhubarb squares that will take the taste buds for a treat!

The rhubarb bars or squares are of a cake-like consistency, so you can add a dollop of whipped cream or ice cream on top if you wish!
Ingredients
1/2 cup white (granulated) sugar
1/2 cup chopped nuts (pecans or walnuts)
1 tbsp. butter or margarine, melted
1 tsp. ground cinnamon
1 1/2 cups packed brown sugar
1/2 cup shortening
1 egg
2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 cup sour cream
1 1/2 cups chopped rhubarb, cut into 1/2 inch pieces
Directions
In a bowl, mix together the sugar, nuts, melted butter and cinnamon until crumbly and set aside.
In a separate bowl, cream together the brown sugar, shortening and egg.
Add flour, baking soda and salt to creamed mixture alternately with sour cream.
Lastly, gently stir in the chopped rhubarb.
Pour mixture into pan and sprinkle with reserved topping.
Grease and flour 13 x 9 x 2 inch pan.

Bake at 350 degrees F for 45 to 50 minutes.
Cut in squares and serve warm or cool.
Serves 18.
