The rhubarb is roasted for a few minutes in the oven, and, added to the mixed baby greens, the feta cheese, nuts and raisins to make the most amazing rhubarb salad!
The rhubarb is roasted for a few minutes in the oven, and, added to the mixed baby greens, the feta cheese, nuts and raisins to make the most amazing rhubarb salad!

Remember, rhubarb is a veggie after all!
Ingredients
2 cups chopped rhubarb (about 1/2" pieces)
2 tbsp. granulated sugar
2 tbsp. balsamic vinegar
1 tbsp. olive oil
1 tbsp. minced green onion
1/4 tsp. salt
1/4 tsp. ground pepper
8 cups mixed baby /leafy greens
1/2 cup crumbled feta cheese (or goat cheese)
1/4 cup chopped, toasted walnuts (*see below)
1/4 cup raisins (golden or brown raisins, or currants)
Directions
In a medium size bowl, toss the rhubarb with the sugar, until well coated.
Let rhubarb/sugar mixture stand for about 10 minutes, stirring twice.
Spread the rhubarb/sugar mixture in an even layer on a cookie baking sheet (I lined the cookie sheet with parchment paper).
Roast the rhubarb in the oven at 450° F for about 5 minutes, or until the rhubarb is just beginning to soften, then allow rhubarb to cool for about 10 minutes.
Meanwhile, in a large bowl, whisk together the balsamic vinegar, olive oil, green onion, salt and pepper.
Add the mixed baby greens, and toss to coat.
Top with the roasted rhubarb, feta (or goat) cheese, toasted walnuts and the raisins.
Serve immediately.
Serves 4 - 6.

Tip - How to Toast Chopped Walnuts
Using the Oven:
Spray a metal baking sheet with oil.
I used my handy, oil spray bottle, the same as the one pictured below, available for online purchase from *Amazon.com. Click on the image for more detailed product information and customer product reviews.
This oil spray pump is also an amazing tool to use when grilling fruit!
I lined the baking sheet with parchment paper, (see picture above).
Add the chopped nuts, and stir to mix.
Bake at 450° F for a few minutes. Be sure to keep a close eye on the nuts, as this process goes very quick!
Using the Stove-top:
Place the nuts in a small dry skillet, and cook over medium-low heat, stirring constantly, until the nuts are lightly browned, for about 2 - 4 minutes.
