You can use ANY type of jam to make these tarts, not just rhubarb jam.
I made these yesterday, and made half of them with rhubarb jam, and the other half with peach jam.
This is one of those recipes I have been making again and again over the past 20 years!
Everyone ♥ loves these tarts...and they are so quick and easy to whip up. You only need to get ONE bowl dirty!:)
Ingredients
1/2 cup butter
1/2 cup margarine
2/3 cup granulated sugar
2/3 cup brown sugar, packed
1 medium or large egg
1 3/4 cups all-purpose flour
1 tsp. almond extract
3/4 tsp. baking powder
Rhubarb Jam (I used Strawberry-Rhubarb Jam)
Directions
In a large size bowl, cream the butter, margarine, granulated sugar, and the brown sugar until well combined, by hand.
Add the egg and the almond extract and continue to mix.
Add the flour and the baking powder, and mix. Dough should come together in a "ball". It is easiest to use your hands and knead the dough for this step.
Roll small balls, about 2" in diameter, and place them in paper lined muffin cups.
Make an small, deep indentation in the center of each tart, and fill with about 1/2 tsp. of rhubarb jam.
Bake tarts at 350° F for about 18 - 20 minutes, or until the edges begin to turn golden. Do not over bake.
Makes 12 - 18 tarts.
