Rhubarb is a veggie after all!
I decided on Oven Baked Chicken for supper yesterday, and decided to create my own warm relish for topping.
This is the recipe I made up ... and it turned out awesome! (My husband and daughter were quite impressed). ;)
You can grill the chicken instead of baking it in the oven.
I added oven roasted potatoes, broccoli, and homemade applesauce as a side dish.
Since Rhubarb is a vegetable it serves as one vegetable serving!
Ingredients
FOR THE CHICKEN
6 boneless chicken breasts (I marinated them with "Italian Salad Dressing" for about 5 hours)
salt and pepper to taste (or lemon pepper)
olive oil for baking chicken
3 cups diced rhubarb (I used frozen rhubarb, thawed, and strained, and discarded the excess liquid)
FOR THE RELISH
3/4 cup granulated sugar
1 tbsp. grated orange rind (zest)
1/2 cup orange juice
1 small or medium red pepper, diced
2 scallions (green onions), minced
Directions
Season the chicken breasts with salt and pepper to taste.
Bake the chicken breasts in a baking dish at 400° F, with olive oil in the bottom, uncovered.
Cover after 1/2 hour and then bake for an additional 1/2 hour or until chicken tests done.
Place the rhubarb, sugar, orange zest, orange juice, red pepper and shallots in a pan
Bring mixture to a boil, and then reduce heat to low, and allow mixture to simmer, stirring often to avoid sticking and burning.
Simmer rhubarb mixture for about 12 minutes, or until rhubarb is tender, and mixture thickens.
Serve rhubarb relish warm over oven baked chicken breasts.
Serves 6.
