♥ If you like cheesecake ... you will love this smoothie! It's like a Rhubarb Cheesecake Smoothie!
Everyone likes something "different" or "unique" to eat, and this smoothie recipe is just that!
This recipe includes strawberries, which can be fresh or frozen.
You could also substitute fresh or frozen raspberries in the place of the strawberries.
This is a recipe intended to serve a group of 6 people, but the recipe can easily be reduced to half of each ingredient quantity for a single or double smoothie treat.

Ingredients
Note - Instead of preparing the rhubarb sauce using the first three ingredients, I use this recipe for the rhubarb base, including the flavoured gelatin.
Use 2 cups of the sauce/base.
Tip - I like to make a large batch of this rhubarb stew/base, and then make rhubarb smoothies, and use the sauce as a dessert topping or as a side dish.
2 1/2 cups chopped rhubarb, fresh or frozen rhubarb
1/4 cup water
4 tbsp. honey, divided
1 1/2 cups plain ice cream
1 cup milk
1 cup frozen strawberries or raspberries
6 ounces cream cheese, cut into pieces
1/2 cup plain yogurt
1/4 cup icing sugar
1/2 dozen ice cubes
fresh strawberries or raspberries, for garnish (optional)
Directions
In a large pan, uncovered, place the chopped rhubarb, water, and 2 tbsp. of the honey and on medium-high heat, bring the mixture to a boil. Stir almost constantly to avoid sticking and burning!
Reduce heat to low, place the lid on half-way, and allow mixture to simmer for about 10 minutes, until rhubarb is tender.
Remove from heat, and allow the mixture to cool.
In a blender, place the ice cream, milk, berries, cream cheese, yogurt, icing sugar, ice cubes, remaining 2 tbsp. of honey, (or add a little more honey if desired), and the rhubarb mixture.
Blend all ingredients together until smooth.
Pour into chilled glasses and serve.
Garnish with fresh strawberries or raspberries, (optional).
Makes about 6 servings.
