Make a rhubarb beverage such as this slush drink adds a vegetable serving to the daily diet since rhubarb is a veggie!
Note - this Rhubarb Drink recipe can easily be made in a smaller quantity if you do not want to use the 12 cups of rhubarb which is listed in the ingredients.
However, if you do have a lot of rhubarb, I suggest you make one large batch at a time.
I like to make a large slush recipe, since it keeps for a very long time in the freezer.
I just scoop the icy slush whenever I want to serve it, and return the
container of slush drink to the freezer for the next time!
Ingredients
12 cups chopped, fresh rhubarb
9 cups water
2 cups granulated sugar
1 box (85 gram size), raspberry gelatin
1 (6 oz. size) can frozen lemonade concentrate
carbonated beverage, for example "Ginger Ale" or "Sprite", etc.
Directions
In a large pan, bring the chopped rhubarb and the water to a boil.
Reduce heat to low, and allow rhubarb to simmer until tender (about 20 - 30 minutes).
Add sugar and stir to dissolve.
Pour the mixture through a colander or sieve, into a large, freezer safe bowl.
Add the gelatin and the frozen lemonade, and stir until well combined.
Cover mixture with a tight fitting lid and freeze.
To serve, using an "ice cream scoop", scoop slush into a glass, and add the carbonated beverage.
Serve this Rhubarb Slush drink with a straw and a parfait spoon!
