This Homemade "Jello" or Gelatin Rhubarb Salad Recipe includes fresh strawberries and canned mandarin orange segments to make an amazing flavourful and colourful Jello/gelatin fruit salad.

This rhubarb salad can be made in a gelatin ring mold, or in a 9" x 13" baking pan/dish, or a glass serving bowl. (There is no need to invert it as with a "mold".)
You can use fresh or frozen rhubarb for this rhubarb salad.
You can use a HEART shape (for Valentine's Day), STAR or CHRISTMAS TREE shape (for Christmas), or ANY shape mold!
Your family and guests will be surprised to know how much they really enjoy rhubarb when they enjoy this rhubarb salad!
A rosy red coloured salad like this is a great idea for an Easter Salad, Christmas Salad, Thanksgiving Salad or a Red Valentine's Day Salad.
Ingredients
Note - If you are using frozen rhubarb for this recipe, thaw it the night before, over a sieve, and discard the excess liquid.
2 - 85 gram size pkgs. strawberry flavoured gelatin (Example: "Jello")
1 1/2 cups boiling water
1 cup cold water
2 cups chopped, fresh or frozen rhubarb
2 cups sliced, fresh strawberries
1 - 10 oz. size can mandarin orange segments, drained
Directions
In a large bowl, stir the gelatin in the boiling water until the gelatin crystals are completely dissolved, (about 3 minutes).
Stir in the cold water, until well combined.
Refrigerate gelatin mixture until partially set, about 1 hour. (Keep an eye on the gelatin, as not to miss the point of when the gelatin begins to thicken.
Add the chopped rhubarb to a pan (if you are using fresh rhubarb, add a few tablespoons of water), and bring rhubarb to a boil over medium heat (uncovered).
Reduce heat to "low" and allow rhubarb to simmer for about 10 minutes (uncovered), or until the rhubarb is tender.
Remove the rhubarb from the heat, and allow it to cool completely.
Add the stewed rhubarb, the sliced strawberries, and the mandarin oranges to the gelatin mixture, and stir until combined.
Lightly oil, or spray with non-stick cooking spray, a gelatin mold, or a 9" x 13" square glass baking dish.
Pour the rhubarb gelatin mixture into the prepared mold, baking dish or bowl, and refrigerate salad until completely firm, about 4 -5 hours.
If desired, invert mold or dish onto a plate. This is not necessary, as the gelatin salad can be spooned from the dish as well.
Serve plain, or with whipped cream, yogurt, Greek Yogurt, or sweetened sour cream.

I used to be a little apprehensive about the success of creating beautiful gelatin salad recipes in molds.
However, I have found out that they look like a lot of work, but really Gelatin/Jello salads made in a mold are as simple as inverting the pan!
