It's fun to use rhubarb, it's a vegetable after all(!) to make dinner dishes.
I believe most rhubarb is baked into pies, crumbles, cakes and an array of desserts, but these scrumptious classics are certainly not the ONLY was to use this tart vegetable.
Recipes like this one may just revolutionize the way your family or your guests think about rhubarb :)
Ingredients
8 cups chopped rhubarb
4 cups diced onion
2 cups cider vinegar
2 lbs. brown sugar
2 tbsp. salt (not pickling salt)
1/2 tsp. ground pepper
1/2 tsp. cloves
1 tsp. ground cinnamon
Directions
Cook the above ingredients over "medium" heat until it just begins to bubble, then reduce heat to "medium/low" and allow to simmer until thickened.
Pour into sterilized jars, seal and process in canner for about 10 minutes.
Serve with pork roast or sausages and/or pan fried potatoes.
