This recipe makes 4 - 250 ml. size jars.
Ingredients
2 cups apple cider vinegar
1 1/2 cups granulated sugar
1 tbsp. kosher salt
1" piece of fresh ginger
1/2 cup pickling spices
1 pound fresh rhubarb stalks
Directions
Cut the rhubarb into 1/2" size pieces. (Cutting the rhubarb into diagonal shaped pieces makes the pickled rhubarb look more attractive!)
Peel the fresh ginger and slice it very thinly.
In a large size pan, combine the vinegar with the sugar, salt, ginger and the pickling spices.
Bring the above mixture to a full boil and boil until the sugar is dissolved, about 5 minutes.
Strain the mixture and discard the solids. Set the liquid aside.
Pack the prepared, sliced rhubarb pieces into 4 - 250 ml. size jars.
Pour the hot liquid over the rhubarb in the jars, filling up to 1/2" from the top rim.
Screw on the lids and rings, and leave filled jars at room temperature overnight to let the flavour meld, then refrigerate jars.
Opened jars will keep for up to one month in the refrigerator.
