This homemade rhubarb sauce is quick and easy, and makes a pretty pink sauce.
GOT frozen rhubarb?
No problem! ... You can use fresh OR frozen rhubarb from your freezer for this sauce recipe.
Ingredients
4 cups chopped fresh or frozen rhubarb (about 1/2"-1" size pieces)
1/3 cup brown sugar, packed
3 tbsp. minced, crystallized ginger
1 lemon wedge
Directions
In a large, microwave-safe bowl, combine the chopped rhubarb, brown sugar and the ginger with a wooden spoon.
Microwave the rhubarb mixture at "high" for about 5 - 7 minutes, or until the rhubarb is tender, stirring occasionally.
Squeeze the juice from the lemon wedge.
Stir mixture, and allow to cool to "warm".
Spoon warm mixture over ice cream, yogurt, pudding, pound cake, or angel food cake.
Serves 4.
Note - If you have left-over sauce, simply store it in the refrigerator for
up to a week. When ready to use the sauce, you can serve it cold, or
heat it in the microwave at a very low setting.
