When it comes to dumplings, these Rhubarb Dumplings with Strawberries are hard to beat!
Strawberries and Rhubarb together are always a
winning combination! You can use fresh or frozen rhubarb, (thawed), for
this recipe, but the strawberries should be fresh!

Ingredients
4 cups chopped fresh or frozen rhubarb
1 1/2 cup water (*Note - if rhubarb was frozen, use only 1 cup)
1 cup granulated sugar
1/8 tsp. salt
1 1/2 cups mashed strawberries
1 cup baking mix (Example: Bisquick)
1/3 cup milk
whipped cream
Directions
In a large saucepan, combine the rhubarb, water, sugar, and salt to a boil.
Reduce heat, and allow mixture to simmer, uncovered, for about 10 minutes, or until rhubarb is tender.
Stir in the strawberries, and return mixture to a boil.
In a bowl, combine the baking mix and the milk, just until moistened.
Drop the batter into four mounds onto the rhubarb mixture.
Cook, uncovered, for about 10 minutes.
Cover, and cook an additional 6 minutes, or until a toothpick inserted in a dumpling comes out clean.
Serve warm with whipped cream.
Makes 4 deliciously delicious dumplings.
