Ingredients
FOR THE FILLING
2 1/2 cups (about 1 1/2 pounds/650 g) chopped rhubarb
1 cup (200-250 g) caster sugar
1/4 cup (50g) unsalted butter, cut into small pieces
FOR THE TOPPING
3/4 cup (150g) all-purpose flour
3 tbsp. caster sugar (golden or regular caster sugar)
1/2 tsp. salt
1 cup (250ml) heavy cream, whipped
Directions
FOR THE FILLING
Spread the chopped rhubarb over the bottom of a greased 8" x 12" (or 9" x 13"), baking dish.
Sprinkle the caster sugar evenly over the rhubarb in the dish, and evenly dot the top with the butter.
FOR THE TOPPING
Sift the flour, sugar and salt into a mixing bowl.
Gently stir in the cream, making a sticky dough.
Spread this mixture over the rhubarb in the bowl, (may need to do this with your hands), covering the top as evenly as possible.
Bake at 375° F (190° C) for about 45 minutes, or until the rhubarb bubbles up.
Best served warm with hot with custard and/or whipping cream and ice cream.
