This easy to make, healthy Rhubarb and Pork Casserole Recipe, is a welcoming pork dish.

You can easily substitute beef or lamb in stead of pork for the ingredients.
Since rhubarb is a vegetable, you have two vegetable servings in this casserole!
Serve with warm dinner rolls and butter ... so yummy!
Note - This recipe works easily as well with stewing lamb / mutton or stewing beef instead of stewing pork.
Ingredients
3 tbsps. oil
1 pound boneless, stewing *pork
2 medium size onions, chopped
1 pound carrots, chopped
1/2 pound rhubarb, chopped
2/3 cup water
1/3 cup granulated sugar
2 tbsps. lemon juice
2 tbsps. parsley
1/4 tsp. cinnamon
1/4 tsp. nutmeg
salt to taste
pepper to taste
Directions
In a large pan, heat the oil, and add the pork and the onions, and cook till well brown on all sides.
Add the carrots, rhubarb, water, sugar, lemon juice, parsley, cinnamon, nutmeg, salt and pepper, and mix to combine.
Bring the above mixture to a boil, and then reduce heat and allow to simmer for about 1 1/4 hour, stirring from time to time.
Serve this rhubarb and pork casserole hot with dinner rolls and butter.
