Here is How to Make Rhubarb Punch.
This rhubarb beverage recipe makes a sweet and tangy healthy punch. Imagine ... a punch made with a vegetable(!) (Remember, Rhubarb is a "vegetable", NOT a "fruit").

This recipe is best made the day before you actually plan to serve it, and then you just need to put it all together before the guests arrive.
Ingredients
2 1/2 pounds of fresh or frozen rhubarb
2 cloves
1 1/2 cups water
1/3 cup granulated sugar
3 cups ginger ale
1 1/2 cups sliced, fresh strawberries
ice cubes
Directions
In a pan, combine the rhubarb, cloves and water, and bring to a boil on medium-high heat.
Reduce heat to "low", and allow mixture to simmer for about 10 minutes, or until rhubarb is tender. (I put the lid on half-way at this point). Stir occasionally.
Remove the rhubarb from the heat, and strain through a sieve.
Press gently with the back of a spoon to allow as much liquid as possible to be extracted from the pulp.
Discard the solids (or use them in another recipe...muffins perhaps?)
Add the sugar to the rhubarb mixture, and stir until well dissolved.
Cover mixture, and chill until cold, (for at least 5 hours). Makes about 3 cups juice/syrup.
Pour the juice into the punch bowl, add the ginger ale and stir gently.
Add the fresh sliced strawberries and the ice cubes.
Makes about 8 cups.
