Years ago, tall, slender bottles of soda, (real glass ones!), were a common treat, especially on hot summer days or evenings.
Thirst quenchers with mouth-watering flavour, these soda bottles were often iced down in galvanized tubs.
Now, chilled cans and plastic bottles of sugar, sweetened fizz seem to have replaced the thrill of soda sipping.
However, the soda drinks are becoming exciting again, with homemade sodas becoming a popular drink idea.
The nice thing about do-it-yourself soda making, is that YOU control the ingredients and the sugar content!
And, of course, you help to reduce the environmental impact of those cans and bottles!
The flavour possibilities are endless!
Making soda drinks at home is easy...and you can even make them with the kids!
Instead of artificial flavours, you can use REAL fruits (or vegetables), and carbonated water.
Rhubarb makes an excellent soda because of its tartness. Tartness helps makes sodas refreshing.
Deciding how to carbonate the syrups is probably the most difficult thing about making sodas at home.
The quickest and easiest method is simply to buy seltzer or soda and mix it with the syrup base.
Here follows a Rhubarb Grapefruit Soda Recipe.

Ingredients
FOR THE RHUBARB-HONEY SYRUP
8 oz. (225g) pound chopped rhubarb
2 cups (500 ml) water
honey (orange blossom or other mildly flavoured)
FOR THE SODA MIXTURE
2 oz. (60 ml) grapefruit juice (freshly squeezed)
1 oz. (30 ml) rhubarb-honey syrup
6 oz. (180 ml) seltzer
grapefruit rind slices, for garnish, optional
Directions
FOR THE RHUBARB-HONEY SYRUP
In a pan, on combine the rhubarb and the water, and allow mixture to come to a boil.
Reduce heat to "low", and allow mixture to simmer for about 25 minutes.
Strain the mixture through a sieve or cheesecloth, and discard the pulp.
Measure the liquid, and add an equal amount of honey.
Stir the rhubarb liquid and the honey until well dissolved.
(This syrup will keep in the refrigerator for up to 2 weeks).
TO MAKE THE SODA MIXTURE
In a glass, combine the grapefruit juice, 1 oz. (30 ml) of the rhubarb-honey syrup, and the seltzer, and stir.
Serve over ice with a slice (twist) of grapefruit rind, if desired.
