Start off your mornings with this irresistible combination of rhubarb, apples, whole grains, and yogurt!
Ingredients
Plain Yogurt
FOR THE COMPOTE
3 cups diced, peeled apples (McIntosh or Empire are good choices)
2 cups chopped rhubarb
1/2 cup granulated sugar
1/2
cup cranberry juice, apple juice, or water
FOR THE MUESLI
2 cups rolled oats (large flake)
1/2 cup large flake spelt
1/2 cup large flake Kamut (or triticale)
1/2 cup sliced almonds
1/4 raw sunflower seeds
2 tbsp. ground flax seed
1 tbsp. sesame seeds
1 tsp. cinnamon
Directions
FOR THE COMPOTE
In a large pan, mix together the apples, rhubarb, sugar and juice, and bring to a boil on high heat. Stir constantly to avoid sticking and burning.
Reduce
heat, cover, and allow mixture to simmer for about 5 - 6 minutes or
until apples are softened and rhubarb is tender.
Transfer mixture to a bowl, and allow to cool. Cover and refrigerate. This will stay good in the fridge for up to one week. (Makes about 3 cups)
FOR THE MUESLI
In a large bowl, mix together the oats, spelt, Kamut, almonds, sunflower seeds, flax seeds, sesame seeds and the cinnamon.
Store in a tightly sealed container. This will stay good for up to three weeks. (Makes about 4 cups)
To Serve: Spoon 1/2 cup of yogurt, 1/3 cup muesli and 1/3 cup compote into a small bowl, or layer in parfait (tall) glass. Allow to sit for about 5 minutes to soften the muesli.
