Whether plain, or including wine, it is a most refreshing rhubarb drink.
If you are looking for a rhubarb punch to make without sugar, this punch recipe can easily be adapted to a recipe suitable for diabetics by substituting an artificial sweetener, (for example: "Splenda").
Ingredients
Note - This punch recipe can easily be adapted to make a rhubarb drink suitable for diabetics by substituting an artificial sweetener, (for example: "Splenda"), in the place of the sugar, and using a sugar-free ginger ale (soda).
1 cup granulated sugar, or artificial sweetener
3 cups water
3 cups chopped rhubarb (1/2" pieces)
1 cup pineapple juice
2 cups ginger ale (soda beverage)
3 tbsp. lemon juice
ice
Note - If desired, reduce the sugar amount to 1/2 cup, and substitute champagne or sparkling white wine for the ginger ale.
Directions
In a pan, combine the sugar, water and the rhubarb.
Cook over medium heat, and when mixture begins to simmer, turn to low, and simmer, uncovered for about 10 minutes, or until the rhubarb is tender.
Remove mixture from the heat, and chill.
Transfer the mixture to a food processor or a blender, and process to liquefy.
When ready to serve, combine the rhubarb mixture with the pineapple and lemon juices and the ginger ale (soda beverage).
Serve over ice.
Serves 8 - 10.
