The ingredients can easily be doubled if you would like to make a large amount of punch.
Lemonade or cranberry juice can be substituted instead of the orange juice and water.
Ingredients
Note - if you are using frozen rhubarb to make this punch recipe, there is no need to thaw it first.
Note - Lemonade or cranberry juice can be substituted instead of the orange juice and water, if desired.
4 cups chopped fresh or *frozen rhubarb
2 cups water
2 cups orange juice
1 cup sugar
sliced oranges, for garnishing, optional
Directions
In a large pan, combine the rhubarb, water and orange juice, and bring to a boil, stirring to prevent sticking and burning.
Reduce heat to low heat, and allow the mixture to simmer for about 10 minutes, or until the rhubarb is tender, (stirring often).
Allow mixture to cool.
Strain the rhubarb mixture through a fine-meshed sieve or cheesecloth, and discard the solids.
Stir in the sugar (to taste), and serve with floating orange slices (optional).
Serves 6 - 8.
