During baking this cake separates into two layers, a moist, airy cake over a rhubarb custard sauce.
You can serve this delicious cake with rhubarb warm or cooled plain, or with a dollop of whipped cream, ice cream or Greek yogurt.
I made this cake yesterday, and the taste is simply amazing!

Ingredients
1 pkge./box (approx. 550 gram size) Yellow Cake Mix
1 cup water
1/3 cup vegetable oil
3 eggs
4 cups fresh rhubarb
1 cup granulated sugar
2 cups whipping cream
whipped cream, ice cream or Greek yogurt for garnishing (optional)
Directions
In a large bowl, combine the cake mix, water, oil and eggs at low speed until moistened.
Beat for 2 minutes at highest speed.
Pour into greased and floured 9" x 13" baking dish.
Sprinkle the rhubarb over the mixture in the baking dish.
Sprinkle the sugar over top of the rhubarb.
Pour the cream over top of the sugar and rhubarb.
Bake at 350° F for 1 1/4 to 1 1/2 hours or until a toothpick inserted in the center comes out clean.
Serve warm or cold with whipped cream, ice cream or yogurt, if desired.
Store in refrigerator.
Serves 8 - 12.
