Cherry Rhubarb Crumble Recipe makes an amazing dessert served hot or
cold with a dollop of ice cream, whipped dessert topping, yogurt, or whipped cream!

In the (unlikely!) event that you actually have left-over of this delicious treat, you can store it in the fridge for a few days, or freeze it to use later!
Ingredients
3 cups cherries, pitted
1 1/2 cups fresh rhubarb, chopped
1 tsp. lemon juice
4 tbsps. honey
1 tsp. almond extract
3/4 tsp. vanilla extract
1/2 cup brown sugar, packed
1/2 cup all-purpose flour
1/2 cup rolled oats
1/8 tsp. salt
1/4 cup butter, cold
Directions
In a bowl, combine the cherries and rhubarb.
Sprinkle the honey, almond extract, vanilla extract, and the lemon juice on top. Toss to coat well, and then transfer to a 9" x 13" baking dish.
In another bowl, combine the brown sugar, flour, oats and salt.
Using a pastry cutter, or a fork, cut the cold butter into the above mixture, until the new mixture resembles coarse crumbs.
Drizzle the crumble mixture evenly over the cherries and the rhubarb.
Pat the crumble topping down lightly with your hand.
Bake at 375° F for about 40 - 45 minutes until the cherries and rhubarb are tender and the topping is golden brown.
Serve when warm or cold, plain or with ice cream or whipped cream as a topping.
Serves 8 - 10.
