Ingredients
6 - 6 oz. pieces of salmon fillets
1 pound chopped rhubarb (1/" pieces)
1/2 cup granulated sugar
1/2 tsp. chopped rosemary
1/2 tsp. lemon zest
salt and pepper to taste
Directions
In a baking dish, combine the rhubarb, sugar, rosemary and lemon zest.
Cover, and bake at 350° F for about 30 minutes, or until the rhubarb is tender, but still holds its shape.
Remove mixture from oven, and stir in the lemon zest.
Set aside, but keep rhubarb mixture warm.
Increase oven temperature to 500° F.
Place the salmon fillets, skin side down, on a foil-lined baking pan.
Season with salt and pepper to taste.
Bake in center of oven, until the fillets are almost opaque throughout, about 20 minutes.
Spoon the rhubarb mixture onto the center of warmed plates.
Lift the salmon fillets from the pan, leaving the skin behind, and place on top of the rhubarb on the plates.
